Ethiopia - Carbonic Maceration
This is a high intervention carbonic maceration natural coffee from Guji, Ethiopia. Carbonic maceration is a fermentation process where whole coffee cherries are sealed in a tank filled with carbon dioxide, creating an anaerobic environment. This slows fermentation, allowing complex fruity and wine-like flavors to develop before the beans are dried and processed.
We taste - Blueberry, Grape, Red Wine, Peach, Raspberry Jam
When brewed, we preferred pour-overs with moderate doses, coarse grinds, and quick extraction times, regardless of brew device. Don’t push it too hard, lower water temps can also aid in getting that perfect cup.
